It's always a good idea to choose a boardgame based on the maximum number of players you're likely to get as much as it is on theme or gameplay. Make sure your collection of games suits your collection of friends, and you'll never have to worry about being a gaming gooseberry ever again*.

Just because a game is for 6 players doesn't mean you can't play it with fewer, or even that 6 players is the optimum number. Don't forget - the morte players you have at your table, the chances are that the game is going to take considerably longer.
If you regularly have 8 or more, why not consider buying two copies of a four player game that you can play twice in one session and running a league in which the top two and bottom two players from each board play off against each other for a final placement.
*Even if you always game with the same three people it's worth stocking up on one or two games that you can play with a larger group, just in case.
